A light fluffy egg omelette sandwich, with spicy chorizo, sweet red pepper and the zing of tomato relish. Just like my grandad made it, but with a little Spanish twist!

Ingredients

  • 50g Chorizo sausage
  • ½ red pepper
  • 1 mushroom
  • 2 eggs (beaten)
  • 1 tsp sunflower oil
  • 2 slices of brown bread (buttered)
  • 3 tsp of tomato relish
  • 1 tsp grated parmesan cheese

Directions

  1. Chop the chorizo, mushroom and red pepper into small pieces.
  2. Season the beaten eggs well with salt and pepper.
  3. Heat the oil in a non-stick frying pan over a medium heat until hot.
  4. Add the chopped chorizo, mushroom, red pepper and fry for 2mins, then separate evenly across the pan.
  5. Pour the eggs into the pan, tilt the pan ever so slightly from one side to allow the eggs to swirl and cover the surface of the pan completely.
  6. Fry for about 1min until the egg has just set.
  7. Use a spatula or fish slice to fold the omelette gently into a roll.
  8. Slide on top of one slice of brown bread.
  9. Sprinkle the grated parmesan over the omelette.
  10. Dollop over the relish and add the other slice of brown bread to make a sandwich.
  11. Slice diagonally, and devour!
