Jerk Chicken with Fried Pineapple

The fiery flavor of Jamaica in a roll... Oh Yes!!
Ingredients
- 1 soft white roll
- 1 chicken fillet
- 1 slice of pineapple
- 2 tsp jerk seasoning
- 1 tbsp olive oil
- Iceberg lettuce
- Mayonnaise
Directions
- Mix 2 tsp of jerk seasoning with 1 tbsp of olive oil in an egg cup.
- Rub the jerk seasoning mix onto the chicken with a spoon.
- Roast the chicken fillet in an oven at 180℃ for 25mins, and allow to rest for 5mins.
- When the chicken is resting, fry the slice of pineapple on a pan with a little butter until slightly browned.
- Add Mayonaise and iceberg lettuce to your bread roll.
- Slice the warm chicken and add to your bread roll, topped with the fried pineapple.
