Chickcorn with Spinach

Roast chicken & sweetcorn mix with fresh spinach, between two pieces of brown bread. Quick and easy. Perfect for picnics at the park.

Ingredients

  • 2 slices brown bread (buttered)
  • Leftover roast chicken breast (150g)
  • ½ tin (100g) of sweetcorn (drained)
  • 4 tbsp of mayonnaise
  • Seasoning
  • Handful of fresh spinach leaves

Directions

  1. Roughly chop the leftover roast chicken and add to a mixing bowl
  2. Add the 100g of sweetcorn
  3. Add the mayonnaise
  4. Mix the ingredients together using a spoon
  5. Add a little seasoning to taste

  6. Now for the sandwich:
  7. Spoon out the chicken & sweetcorn mix onto one of the slices of brown bread
  8. Place on top a handful of fresh spinach leaves
  9. Add the other slice of brown bread to make the sandwich
  10. Cut in half, then enjoy!
